Spice-lovers always know
all spicy
food restaurants in their neighborhood, understand the
particulars of
Indian
and Chinese
spicy food and know the
advantages of spice
eating. The next step is to try to prepare spicy dishes at
home. You
can cook spicy food
both every day and for special occasions – like
International
Spicy Food Day, the main thing is to keep certain
cooking tips
and safety measures.
There are some general
rules of spicy
food cooking. First make sure you have washed your hands before going
to the lavatory, otherwise your skin or, worst of all, eyes can be
burned. For the same reason put on gloves and goggles while dealing
with the hottest spices like Habanero. Also don't let the fumes to
come out of the pot with fresh chilies. The best variant would be to
wear a space suit and keep away from the kitchen where such dangerous
things happen, but unfortunately it isn't possible, especially if you
decided to cook spicy food at home. So let's compose a spicy food menu.
One of the best appetizers
is Lazy
Cook's Guacamole – a rare instance when the time of preparing
is
equal to the time of eating – less then 5 minutes. To make
this spicy food dish you will need 1
avocado, 3 tablespoons of chunky salsa, 1-4 tablespoons of chili
powder and some Mexican herbs like cilantro. Rinsed avocado should be
cut lengthwise. Then extract the seed, scoop out the flesh with a
spoon and place it into a bowl. Next, stir up chili powder and salsa
with the flesh and fill the avocado shells with this mixture. The top
can be strewn with herbs and chili powder.
Other good spicy food
appetizer is
Pam's Favorite Salsa, described in Rick Bayless' cookbook. You need
1 big tomato, 1 onion, 1 clove of garlic, 3 Serrano or Jalapeco
chillies without stems, 8-10 chopped springs of cilantro, 1 teaspoon
of cider vinegar or lime juice, ½ teaspoon of salt. Cut the
tomato and the chiles into small pieces and mix them. After this add
cilantro, chopped onion and garlic, then salt and vinegar (or lime
juice) and one tablespoon of water. After half an hour this spicy food
blend can
be served.
One of the most delicious
spicy food
main courses is Musamun Beef Curry which has an amazing ability for
creating a festive mood. Its ingredients are numerous and the cooking
process takes some time, but the result... oh, just try and you will
eat this spicy food dish every day! So the recipe is to take
¾
pound of beef
top round, 1 can of coconut milk, 1 russet potato, 1 onion, 3 Pequin
chile peppers, ½ cup of roasted peanuts, 1,5 tablespoons of
fish sauce, 1 teaspoon of Curry paste, 2 tablespoons of peanut oil
and 1 teaspoon of brown sugar. Cut the beef and peeled potato into
cubes. Chop the peppers and cut the onion into slices. Heat the oil
with the paste in a frying pan for spicy food until bubbles appear.
Then add the
meat, fish sauce, coconut milk, onion, potato, chile peppers and
brown sugar. Mix it up thoroughly and cook 10 minutes over high heat
and 30 minutes with reduced heat. After that sprinkle Musamun Beef
Curry with roasted peanuts and served it with pilaf or steamed rice. If
all the rules were kept, this spicy food dish will be really
delightful1.
And finally let's make
spicy food
dessert. The following recipe will particularly please those who are
on a diet because it contains no flour. For this spicy food Chocolate
Cake you
should take 3 divorced eggs, 1 tablespoon of chile powder for spicy
food, ½
cup of granulated sugar, ¼ cup of good strong coffee, 8
ounces
of bittersweet chocolate chips and 1 cup of butter. Heat the oven up
to 325F, grease the springform pan with butter and put parchment
paper on its bottom. Then melt sugar and coffee with butter over low
heat. When the sugar dissolves, combine the mixture with chile powder
and chocolate chips. Remove the pan from the heat, cool it a little
and whisk in egg yolks. Beat up whites of eggs with 1 tablespoon of
sugar until they become spumous. 1/3 of egg whites has to be
mixed with the chocolate blend, added to the remaining whites and
spooned into the pan. Bake it about an hour, then cool it and serve
with whip.
Bon appetit!
